Quinoa Bean Pilaf

1 cup quinoa
2 cups broth (vegetable, chicken or beef)
1 tablespoon olive oil
¾ cups of vegetarian baked beans (rinsed)
½ cup thinly sliced scallions, white & green parts
½ cup dried cranberries
1 tablespoon chopped flat-leaf parsley
1 teaspoon lemon zest
Juice from 1 lemon
2 teaspoons honey
Sea salt
Freshley ground pepper
½ cup chopped pecans
In a medium saucepan, bring the quinoa and broth to a boil over medium to high heat.  Then lower heat, cover and simmer for about 15 to 20 minutes until broth is absorbed and quinoa is tender.  Fluff quinoa with a fork and let cool slightly.
Meanwhile, in a large mixing bowl, combine the oil, scallions, cranberries, parsley, lemon zest, lemon juice, honey, nuts and beans.  Stir in quinoa.  Season to taste with sea salt and pepper to taste.
